Ingredients
1 sm can pumpkin (not pie filling)
1 container whipped topping
1 cup Splenda
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/8 tsp ground cloves
Mix all ingredients until fluffly. Keep refrigerated until ready to serve. "One slice of pumpkin pie has a whopping 40 carbs, which is way over the limit for those on a low carb diet. So, I created a low carb version that is just as tasty, with no cooking needed! Half a cup of canned pumpkin has 6.5 grams of effective carbohydrate and 3.5 grams of fiber. That looks positively scrumptious! Unfortunately, though, it has more carbs than you realize. You considered Splenda to be zero carb. The sucralose itself is zero carb, but granulated Splenda contains a carrier that has one carb per teaspoon. So your recipe has an additional 24 grams of carbs, total. You might consider using a liquid sucralose. Most of them only take a few drops to equal a cup of sugar in sweetness, and they are truly zero carb.
I intend to try your recipe making it that way, and I expect it to be really great!
Oh thank you for commenting! I did look on the back of the back and it does say >1 carbohydrate per serving. Actually, you could get away with a lot less Splenda and still have it be sweet because of the whipped topping. Its still better than a slice of pie, am I right! lol
Do you know where I can buy liquid sucralose?
Liquid sucralose is available on the Internet at any of the stores that sell low-carb ingredients, under lots of different names. Use Google or any search engine to find it.
