Quick, Low Calorie, Cooking for Two (or Less)
Whole wheat pita bread
6-oz can tomato paste
2 tbsp Italian seasoning
Fresh mushrooms, thinly sliced
1 small green bell pepper, cut into strips
1 small onion, coarsely chopped
2 cups shredded mozzarella cheese
Mix tomato paste and Italian seasoning. Spread over 1 slice pita bread. Top with mozzarella, mushrooms, peppers, and onions.
Either:
1. Preheat oven to 400 degrees and bake for 10 minutes OR
2. Microwave on High for 1-2 minutes.
